I am also reminded of my favorite Christmas quote that comes from the
last public address given by President Howard W. Hunter to the Church. As part of his talk, he suggested twenty-two things we could do this Christmas. President Hunter said, This Christmas, [1] mend a quarrel.
[2] Seek out a forgotten friend.
[3]Dismiss suspicion and replace it with trust.
[4] Write a letter.
[5] Give a soft answer.
[6] Encourage youth.
[7] Manifest your loyalty in word and deed.
[8] Keep a promise.
[9] Forgo a grudge.
[10] Forgive an enemy.
[11] Apologize.
[12] Try to understand.
[13] Examine your demands on others.
[14] Think first of someone else.
[15] Be kind.
[16] Be gentle.
[17] Laugh a little more.
[18] Express your gratitude.
[19] Welcome a stranger.
[20] Gladden the heart of a child.
[21] Take pleasure in the beauty and wonder of the earth.
[22]Speak your love and then speak it again.

Who In the World Is....
C h e r y l T y s s e l i n g was born in Holbrook, AZ and grew up in Joseph City, AZ. She has 4 brothers, 2 sisters and falls in line as the 3rd oldest. Cheryl has 3 children: Rachel, JT lives in CA and Kimmy lives in NM. Cheryl is very well traveled and has lived in many different places including Alpine, AZ; Albany and Queens, NY; Battle Mountain, NV; Moreno Valley, CA; Savanna , GA and Palestine, TX to name a few. She says Savanna Georgia was her favorite place to live because she loved being a part of the old, historic south. Not to mention they make great candy! Her favorite color is blue and she loves Mexican food. Some of her favorite things to do are boating, walking, hiking, sewing (she adds she is trying to do more), volleyball, basketball & motorcycle riding. When asked one of her most embarrassing moments, Cheryl says: “Not having my legs shaved when I broke my neck.” We understand completely! Something no one knows about her is that she is planning 2 weddings and both are happening within 3 months of each other. Her favorite movie is “One Crazy Summer”. Cheryl and her husband met at NMSU in Las Cruces, NM during his investigation into the church. Cheryl has lived in Round Valley since May 2009. Some of the church callings Cheryl has held are Relief Society President, Counselor in YW, Primary President and nursery. She says nursery is her favorite because she loves kids. Her favorite latter-day prophet is President Hinckley. We are so happy to have you in our ward!!

Salsa enrichment activity recipes
THANKS AGAIN TO CINDY!! She did a great job!
We had a lot of fun and learned a lot at the last enrichment activity. As promised, here are the recipes Cindy showed us. Trust me, these recipes are super delicious and very easy to make. I also have Shelley's 3 different kinds of salsa recipes. If you want it, let me know.

Easy "Canned" Salsa
1 28 oz. can whole stewed tomatoes
1 7 oz. can diced green chili (or 3 or 4 Hatch chili)
1 4 oz. can jalapenos (or 1 or 2 fresh, watch the heat though)
1 or 2 green onions, sliced (optional)
½ to 1 whole white onion, chopped (this is to your taste, can rehydrate some dehydrated onions)
1 T. crushed red pepper (to taste)
2 t. garlic salt
½ t. salt (to taste)
You can throw everything in your food processor and pulse until the texture is to your liking. Or you can even put it in the blender for a smoother salsa.

How to Can Salsa
Canning produce from your own garden can be very rewarding. You can have many different varieties of canned goods stored and ready for your family to eat with a small amount of preparation. See these simple steps to home canning.
Difficulty: Moderately Easy
Things You'll Need:
· tomatoes (8 cups)
· 2 1/2 cup onions
· 2 cups Bell Pepper
· 3-5 jalapenos
· 6 cloves minced garlic
· 2 tsp cumin
· 2 tsp pepper
· 1/8 cup canning salt
· 1 cup vinegar, lemon juice or lime juice
· 16 oz tomato sauce
· 16 oz tomato paste
· large stock pot
Step 1
Commercial Caner / Stock pot
For home canning garden fresh salsa we will be using a water bath canning method. If you don't own a commercial water bath caner a large stock pot can be used as a substitute. The only difference between a commercialized water bath caner and a stock pot is the amount of jars you will be able to fit in it.
Step 2
Blanching Tomato's
The first step in making salsa is blanching the tomato's. Blanching is a very easy process you can use to can many types of vegetables and fruits. Simply it is a process where you submerge produce in boiling water for 1-3 minutes and then plunge the produce into cool water. This process separates the skins from the produce making for a much easier peeling process. It is necessary to remove the skins as they become tough and chewy when left on and canned.
*make a small slice in the tomatoes before submerging in the hot water to make it easier.
Step 3
Peel and Dice
Once your tomato's have been boiling 2 minutes remove from your pot and plunge them into a sink full of cold water. When the tomatoes cool you will see the skins begin to lift off of the fruit. Peel your tomatoes and remove any bruised spots. Let the tomatoes drain in a colander for 3-4 minutes to get rid of the excess liquid. Dice your tomatoes and the rest of the fresh produce ingredients.
Step 4
Ingredients
Put all of the ingredients listed into a pot to boil on the stove. You can use lemon and lime juice as a substitute for vinegar. I never stick to the recipe as written. I add green chilies, cilantro, chives or any other fresh produce that I know my family enjoys. I encourage you to add as much of or as little of anything that you know your family likes.
Step 5
Boil and Simmer 10 minutes
Bring all of the ingredients to a boil and allow them to simmer for 10 minutes. Stir your mixture occasionally with a wooden or plastic spoon. It is time to heat up your water bath caner as well. Fill a large stock pot 3/4 full or ensure the water will cover your jars by at least 1 inch. The water should be boiling for 5 minutes before you put the canned produce in.
Step 6
Removing air / Filling Jars
Once your salsa has simmer 10 minutes remove from the heat and begin filling your jars. Fill your jars to within 1/2 inch of the top. You want to use a flat wooden or plastic utensil to ensure you do not have any air bubbles inside your jar. This is done by running your utensil along the inside of your jar. Using a paper towel clean the top outside and inside of your jar. You want to make sure there is no produce between the top of the jar and your canning lid.
Step 7
Large Stock Pot for Canning
This recipe will make 7 and 3/4 quart jars full of salsa. I recommend only filling 7 jars and eating the remaining salsa fresh. You must keep the required amount of head space in the jars for the canning to be successful and your produce safe to eat. Place your quart jars inside your water bath caner for a process time of 25 minutes. I use a large stock pot as it works the same and saves me the expense of buying a "proper" water bath caner.
Step 8
Cooled Salsa
After you have processed the salsa for 25 minutes you can remove your jars and let them cool. Label your jars with the date to ensure that your produce is eaten within the proper time frame. This salsa is good up to one year after the canning date, however, it is so good I guarantee it will be gone much sooner than that. Enjoy your freshly canned produce!
Tips & Warnings
Add any vegetable or seasoning that your family loves.
Can the salsa in smaller jars if you know they will not be consumed quickly.
Give some salsa as gifts.
Increase your cook time if you are more than 1000ft above sea level.
A good rule for canning is to increase process time by 5 minutes for every 1000ft above sea level.
Do NOT use metal utensils when you are canning.

Who In the World Is....Stacey Johnson?
We are tickled to have Stacey Lynn Johnson and her family in our ward. Thank you to Stacey for letting us get to know her better! She was born in 29 Palms, CA and did a lot of moving around when she was growing up. She has 3 brothers and 2 sisters with Stacey being the oldest. She and her husband, Butch, met in their high school’s health class and also shared similar friends. They have 4 children, Charlotte age 13, Butch age 12, Jake age 7 and Bailey age 6. Some of the places Stacey has lived include 29 Palms, CA, Orange, CA Oceanside, CA and in Arizona Glendale, Yuma, Phoenix, Buckeye, Tonopah, Avondale, Flagstaff, Litchfield Park, Happy Jack and Eagar. WOW. Stacey says her favorite place to live is everywhere because she was with her family. Her favorite colors are white & green. She enjoys hiking, driving in the forest looking for animals with her family, crochet (although she hasn’t done it for a while), reading and doing anything with her family. Stacey relates one of her most
embarrassing moments: “We moved when I was a Sunbeam and I went to my new ward and very excitedly sang Jesus Wants Me for a Sunbeam. The first time we sang the word sunbeam, I enthusiastically jumped up out of my seat yelling the word (like we did at my previous ward) while the rest of the primary sang sedately. I don’t really remember what happened after that, but I do remember that it was quickly dropped from my favorite song list.” When asked to share something no one else would know, Stacey reveals: “I have absurdly short toes attached to expansively broad feet.” Good to know! Stacey dreams of traveling the world someday. She has lived in Round Valley a little over two years when Butch was hired to teach computer networking at the high school. Some of her church callings have been: Primary Teacher in CTR 8, Valiant 11 & 12, Counselor. Also in Relief Society: Enrichment Specialist, Chorister, Counselor & Visiting Teacher which has been her favorite because it is easier to help people and she relates she has had some amazing partners. Her favorite Latter-day Prophet is a tie between Spencer W. Kimball and Gordon B. Hinckley. President Kimball because he was always straight forward and President Hinckley because he was straight forward and funny.
Be sure to welcome the Johnsons when you see them!

August Spotlight
We are so happy to have Cheryl and her family in our ward and she kindly agreed to be our August Spotlight. A big thank you to Cheryl for letting us get to know her
better!
She was born in Miami, AZ and grew up in Roosevelt and Globe/Miami, AZ area. She has 1 brother and 2 sisters and Cheryl is the 2ND oldest. Her and her husband were married in 1987 and they have 2 beautiful little girls, Ayla Ann and Ethel Ann. Cheryl and her husband met at his pool in Globe, she was good friends with his niece and decided they should meet. Later they all went to a George Straight concert. In 1988 they lived in Alabama near Fort Rucker for her husband's training. May 1988, they moved to Berlin Germany for his first duty station. Cheryl says this was the most exciting place they ever lived because it is so different there and they had the opportunity to be there when the Wall fell. Cheryl says even with all the excitement of a new place, the whole time they were there, they missed their families. After that, they moved back to Globe and lived there until 2001 when they moved to Show Low. They moved to Eagar in 2005 to be closer to her husband's work. Cheryl's favorite color is blue and favorite food is chocolate. She likes to sew, read, quilt, work in the yard and visit with family. Cheryl served in the nursery in Berlin and has served in the Primary presidency in Show Low and is now in the nursery again. She loves serving in the nursery the best because the kids are so young and sweet. Cheryl's favorite prophet is President Hinckley.

If you would like to join the fun, please call Sister Nelson at work 3- 5501 or at home 3-2137 so you know what to bring and where we are meeting as that will alternate. We can change the day to Thursdays if there are some people that can’t meet on Wednesdays.
